After 25 years as one of New York’s top dining destinations and earning every accolade under the sun — from three Michelin stars to being named ‘World’s Best Restaurant’ — Executive Chef and Owner Daniel Humm decided to celebrate Eleven Madison Park’s silver anniversary with a dinner series featuring alumni who’ve gone on to become top chefs with their own restaurants.
“It was much more emotional than I though it was going to be,” says Chef Humm of Eleven Madison Park of the first dinner in the series hosted by Chef Connie Chung, Executive Chef of Milu. “I’ve been here 19 years and the restaurant has been here 25 years but it’s been my life.”
One major change for all the returning chefs: Eleven Madison Park switched to a plant-based menu in 2021 (and the next year became the first plant-based restaurant to receive a three-star Michelin rating). For her dinner at the end of September Chef Chung had no trouble adapting. Her dishes included Smoked Celery Root with tonburi, cucumber pickles and horseradish crème as well as Eggplant with Fish Fragrant Sauce and yuba.
"Out of the many lessons I learned from Eleven Madison Park there are two I go back to time and again,” says Chef Chung. “One is balance. That is a constant mantra: salt, acidity and a touch of heat. Those three elements together work towards a balanced and delicious dish. The second is telling a story, especially now that I'm cooking the food of my childhood and heritage. Cooking food with meaning, heritage, and a feeling behind it makes a difference. That was huge at EMP and something that I still apply today."
Recent dinners have also included Chef Hussain Shahzad (The Bombay Canteen, O Pedro and Veronica’s) and Chef James Kent (Crown Shy, Saga and Overstory). And for the month of October the main dining room of Eleven Madison Park has been featuring a special 25th anniversary ‘retrospective menu’ — and no, they did not bring back any of their signature meat dishes. Instead courses like Carrot Tartare, White Truffle Tortellini with Chestnut and Celery Root with Black Truffle highlighted how the restaurant has transitioned to its current plant-based menu.
Tickets are now available for upcoming alumni dinners. Chef Flynn McGarry of Gem will be featured on November 6 and Chef Richard Lee of Saison will have his dinner on December 4. Chef McGarry came to Eleven Madison Park at the age of 14 to stage and impressed Chef Humm enough to once say “I had never seen a kid at that age who was so knowledgeable and so determined to become a chef.” Chef Lee began at Eleven Madison Park as a cook in 2013 then worked his way up to Sous Chef.
