Copenhagen is home to some of the world’s most sought after dinner reservations. And while a few have earned three-Michelin stars as well as the title of ‘World’s Best Restaurant’ the most satisfying meal I had in all of 2023 was at Restaurant Jordnær , located a short commuter train ride away from the main city in Gentofte. Chef Eric Vildgaard and his wife and partner Tina Kragh Vildgaard have crafted a tasting menu and dining experience that maintain excitement and satisfaction throughout its many courses — and earned the restaurant two Michelin stars as well as 2023 “Restaurant of the Year” in Denmark by the Danish Dining Guide. I spoke with Chef Vildgaard, along with Tina Kragh Vildgaard, about their shared passion for Jordnær and their vision to provide every guest with a memorable evening.
What’s the first dish you remember having where food took on a more important meaning for you?
Eric Vildgaard: My brother started working at an early age. And with his first paycheck he took me to a Middle Eastern neighborhood in Copenhagen and we ate shawarma. I must have been like 10 years old. Now it’s kind of the national dish of Denmark (laughs) but back then it was something really extraordinary. And that was the first time I felt there was more to food than just eating. It's not just what's on the plate, it's the thought behind it. To travel outside our neighborhood and share a meal was important to him. It's one of those memories that will stay with me forever.
Was there a first dish you made where you felt your cooking had risen to a new level?
I didn’t create it alone, but it was with René Redzepi at Noma. It was an interpretation of the sheep milk dessert with granita he had using sorrel, yogurt and dried berries. It ended up being such a good dessert it made me feel like I was part of a community. I would still gladly serve it in my restaurant.
Many of the opening dishes in your tasting menu use caviar — leading up to its own dish that is one of the best bites I have ever taken. Tell me about your love of caviar.
Caviar to me is the ultimate luxury. It's going to take a little bit of time to explain my love for caviar (laughs) because it's dinosaur eggs. This is something from the past. ‘We traveled 260 million years to end up in a dish with walnuts’ (laughs). Of course now we cultivate it by farming but in theory it is an untouched product from nature which is probably the oldest item on the planet earth that we can eat. 260 million years old! It is crazy old.
It elevates your status to a ‘fine dining’ restaurant for some magical reason. And in the beginning I added it to the dishes because of that. Then at some point I was out eating with Tina and we had a dish served by a very good
