After a few roller coaster years, restaurants are back in a big way, and culinary creativity is alive and well. At dining tables around the world, passion, ingenuity and an enduring ability to dream are on the menu—along with spearfished seafood, purified rainwater and (highly palatable) sustainability education.
While the best restaurants increasingly have new missions, the emphasis on pleasure and prestige isn’t going away. The restaurant-awards world is booming: new Michelin guides, the Best Chef Awards, La Liste, the World’s 50 Best and more.
This isn’t one of those lists. Rather, I asked a few professional eaters to weigh in on what’s brand new, what’s up and coming, and what makes them eager to return. Some of the restaurants might land on the big-name lists; others won’t, and that makes them no less worthwhile. (Note: This list is alphabetical, not a ranking.)
Kristian Brask Thomsen is a culinary ambassador, award-winning filmmaker (Michelin Stars), world tour manager and host of extraordinary dinner parties. Lithuanian supermodel turned world food ambassador Aiste Miseviciute made her gourmet name with the blog Who Said that Models Don’t Eat? and now runs Luxeat. And Flip Dejaeghere calls himself one of the most passionate food lovers in the world, traveling almost nonstop to find “the most refined restaurants wherever that may be,” which he documents on social media.
“The rise of Oceania from the bottom of the world is no longer to be stopped,” says Brask Thomsen, “and with a beard and hair reminiscent of the Nordic god of thunder, Vaughan Mabee, from the distant islands of Earth and with a multitude of victory badges adorning his cape, has become the chosen one who now experiences a tsunami of attention from the rest of the world, and very deservedly so.” Mabee celebrates how “magical, real, entertaining and memorable food can be,” especially by spearfishing and hunting much of the seafood and meat on his spectacularly local menu. “Amisfield is what Noma originally inspired to be, but on the very other side of the globe.” (Full disclosure: Brask Thomsen provides communications assistance to a small group of restaurants in which he strongly believes, including Amisfield. And in this case, I couldn’t agree more.)
The new venture from Norbert Niederkofler (who held three Michelin stars plus a green one for many years at St. Hubertus in the Dolomites) isn’t exactly under the radar. Last month, it received a third star and green star of its own. Atelier Moessmer occupies the former executive villa of the cloth factory Moessmer, one of the oldest and most renowned fabric producers in the world.
