Every day, the Historic Davenport Hotel in Spokane, Washington crafts 150 pounds of its famous soft peanut brittle. It’s salty, sweet, and divine, but what sets the secret recipe apart is its texture—instead of being pull-your-crowns off sticky, this beloved brittle is delicate and melts in your mouth. The iconic historic hotel also sells a chocolate version.
“Our candy makers use a secret recipe, mixing the ingredients from scratch and pulling the peanut brittle on a marble slab, the old-fashioned way that results in a soft texture,” explains Dania Duke, vice president and area managing director at The Davenport Hotel Collection.

As for the Davenport’s Soft Peanut Brittle, it was invented by Sophia Gerkensmeyer, who worked in the hotel confections’ kitchen as a forelady from 1929 to 1940. She then worked at a candy store and a regular customer commented how hard peanut brittle was damaging her dentures, which got Gerkensmeyer thinking about how she could make a softer rendition of the candy.
Coincidentally, a remodel of the Davenport Hotel was happening and Gerkensmeyer was able to acquire a piece of the hotel’s marble flooring that had been ripped out of the basement for $20. (A marble surface is a key component for traditional candy marking). She spent a couple of weeks experimenting with recipes on the stone until the first batch of Soft Peanut Brittle was perfected. The treat was kept under wraps until 2002 when the hotel reopened and became Davenport’s signature treat.
