The world’s longest-lived people aren't gym obsessive or taking every vitamin and supplement under the sun. They are living life fully, slowly, and consuming a whole-food, plant-based diet. These few and far-between centenarians primarily live in what has been coined by medical statistician Dr. Gianni Pes as “Blue Zones,” or areas that produce about 10 times more centenarians per capita than the United States. With the recent release of the Live to 100: Secrets of the Blue Zones documentary on Netflix, the Blue Zone concept is going viral again with Google searches trending up as people seek to live a healthier life of purpose, with a particular focus on food.
Oatmeal and amaranth – here we come.
For travelers who seek to experience the Blue Zones – from Okinawa Japan to Ikaria, Greece — the nation’s largest vacation ownership brand, Club Wyndham, recently teamed up with Take a Chef to bring American travelers easy access to Blue Zone culinary experiences close to home across the USA without ever having to lift a finger. With more 40,000 participating personal chefs around the world and 14 eligible Wyndham properties from coast to coast, Club Wyndham is giving guests the opportunity to choose their own chef and curate their own farm-to-table Blue Zone meal, all while vacationing everywhere from the sun-filled island of St. Thomas to the bustling tourist district of Downtown Atlanta.
Travelers can score a complimentary private chef to serve up a decadent tasting menu, inspired by the Blue Zone philosophy. For example, research links the community of Ikaria, Greece. with increased longevity with their traditional Mediterranean diet, heavy with vegetables and healthy fats and it contains smaller amounts of dairy and meat products. You can enjoy a plant-based, Mediterranean meal of cauliflower steak with sun-dried tomato-quinoa tabbouleh, and edamame hummus, at Club Wyndham Desert Blue with Chef Julian Gonzalez Cruz.
Austin-based culinary professional Chef Mariana Ascoli has crafted a menu fit for an Okinawa, Japan, Blue Zone sampling for Club Wyndham Austin guests, which includes dishes such shiitake congee and brown rice with tangerine rayu topped with julienned green onions and crispy shallots. Yum’s the word!
For access to the private chefs, guests can book and travel to any of the eligible 14 resorts to receive a unique access code, along with details on how to book the complimentary chef experience via Take a Chef for up to four guests if they book by November 30th, 2023, and travel by December 30th, 2023. From there, the guests will have the opportunity to communicate directly with their chef to schedule their meal and agree upon a menu that meets their wants and dietary preferences.

“Chowder has always been here,” says Emily Haynes. “It isn’t just a dish for Nova Scotians — it’s who we are.” The executive director of Taste of Nova Scotia, an association that promotes businesses that champion local ingredients, Emily is taking me for a blustery coastal stroll along the Bay of Fundy. “Chowder was shipboard food,” she says as we pass fishing boats stranded on the bay’s muddy bottom; the Atlantic inlet between the Canadian Maritime provinces of Nova Scotia and New Brunswick is home to the world’s highest tides. “Fishermen would cook salt cod or fresh catch with salt pork in hot water, then ship’s biscuits were added as a thickener. It was a tasty meal that could feed a whole ship from one pot.”

As another crazy summer of travel to Europe came to a close, Americans once again put their seemingly insatiable appetite for Europe travel on full display this year. Heading into the busy holiday season, airlines and airports in Europe are still struggling with staffing shortages and on-and-off-again worker strikes, meaning that lines and wait times at Europe’s airports will likely continue to be pretty long well into the holidays and beyond.
