The famous Asian-inspired hotspot KYU has opened its first location on the West Coast this month. KYU already has top-rated restaurants in Miami, New York, and Mexico City, making its address at the Fontainebleau Las Vegas one of the most hotly anticipated restaurant openings of the year.
The restaurant is tucked into the 67-story luxury resort and casino on the Las Vegas Strip. It will include an expertly crafted menu and a stunning modern interior that includes a living plant moss wall, signature wooden tables, and bespoke mural art throughout the 5,000-square-foot dining space.
“We are beyond excited to bring KYU to Las Vegas as our first West Coast location,” said Jordan Sayfie, founder of KYU, in a press release. “As our longtime fans in Miami, New York and Mexico City know, we strive to create an extraordinary dining experience and serve as a social destination for guests from around the world. Our new home at Fontainebleau Las Vegas is the perfect reflection of our refined culinary and cocktail program, and we’re thrilled to be welcoming both locals and visitors alike.”
The menu is led by Executive Chef Chris Arellanes and was “inspired by global travels.” It includes KYU classics as well as unique dishes that will only be available at the Las Vegas location, including Royal Golden Chicken served with foie gras, black truffles and smoked caviar cream and Scallop Gyoza made with persimmon and lemon dashi.
“KYU brings a standard of excellence that perfectly complements the Fontainebleau Las Vegas restaurant collection,” says Fontainebleau Las Vegas Senior Vice President of Food and Beverage Anthony Olheiser. “We are incredibly proud to be the exclusive home of KYU in Las Vegas and cannot wait for guests to experience the extraordinary culinary journey that Chef Chris and his team bring to the table.”
The restaurant opened its doors earlier this month and is currently available for reservations.
