More Manhattanites are making their way out East this summer, with popular downtown restaurants expanding their reach all the way to the Hamptons.
SoHo’s Wayan and Ma•dé, will be serving their unique Indonesian cuisine in East Hampton starting on Friday, May 24 through September 1. The summer-long pop up will take place at Buttero (31 Race Lane, East Hampton). It’s the restaurants’ second stint out east, following a two-week pop-up last season in Amagansett.
Cedric and Ochi Vongerichten, the couple behind the two popular NYC restaurants partnered with full-time Hamptons resident Erik Stern, the founder and operator of hospitality production company Tiny Seed.
The Wayan and Ma-de Hamptons menu will highlight vibrant Southeast Asian flavors and feature fresh ingredients sourced from local fishermen and farms. Dishes include tuna tartare with sambal hijau vinaigrette and puffed rice; sweet corn fritters; heirloom tomatoes with sambal oelek vinaigrette; ginger turmeric-dressed fluke sashimi; crab fried rice with green chili, garlic and cilantro; crispy ribs with soy tamarind glaze; black sea bass with calamansi vinaigrette; and lobster noodles with black pepper butter and thai basil.
To drink, an opulent cocktail menu. Summertime specialties include a Calamansi Fizz with dry gin, calamansi, aquafaba and rosemary; Tulumn with tequila, huacatay, black pepper, cucumber and bell pepper; St. Jean with gin, clarified pineapple, cilantro and Kaffir lime; and Kuat-tini with vodka, housemade “kina” aperitif, lychee and falernum.
Just off the Montauk Highway in Bridgehampton, West Village Italian restaurant Arthur and Sons will open a year-round location at 203 Bridgehampton Sag Harbor Turnpike. The standalone restaurant will churn out red sauce classics from 4 p.m. - 2 a.m. daily.
Named in tribute to executive chef Joe Isidori’s family’s three generations in the New York restaurant industry, Arthur & Sons serves a mix of family recipes and new, elevated Italian American dishes. Expect classics like meatballs with ricotta, Caesar salad, fried calamari, baked clams oreganata, and sausage and peppers with shaved provolone. Entree highlight include spicy rigatoni alla vodka, chicken parmigiana, shrimp scampi, spaghetti carbonara and veal marsala. Additionally, House Specialties pay tribute to the real classics such as Old School Sunday Gravy, Chicken Alla Vodka, Eggplant Parmigiana and Rigatoni all a Norma Al Forno. Classic Italian desserts offer a perfect end to the meal with “Spumoni My Way.”
Curated by Chef Isidori, Arthur & Sons’ wine list features producers including Brunello di Montalcino and Sassicaia Tenuta San Guido as well as classic Italian wines including Sartori, Giovanni Rosso and Vermentino di Sardegna.
