Pyramids and human sacrifice: the top ancient sites in Peru

The traces of human civilisation in Peru date back some 20,000 years, to nomadic peoples who crossed into the Americas via the Bering Straight during the last Ice Age. From these beginnings to the Mochica and Nazca peoples living in the first centuries AD, to the famous Incas of Machu Picchu, today visitors can trace that history back thanks to a wealth of fascinating archeological sites in the country. While Machu Picchu deserves its place at the top of the fame table (and gets the hordes of visitors as a result) there are several other ancient sites in Peru well worth your time. Here are some of our top picks.

Where to eat in Bogotá, the Colombian capital taking on Lima's food crown

Chef Mario Rosero is standing beside a wood-fired grill at the back of Prudencia, the restaurant he owns in La Candelaria, Bogotá’s cobblestoned old town. The grill has three circular grates that can be adjusted to different positions. Small pieces of pork are sizzling on the one directly above the flames; a cast iron pot filled with corn is cooking less fiercely on another, higher up. Perfecting this clever, compact set-up is what Mario — a Culinary Institute of America graduate born in the Colombian city of Pasto and raised in Los Angeles — has been up to since the pandemic.

A city, a port and a gateway to Latin America, Lima doesn’t have a distinct geographical cuisine, it has dozens of them. Regional ingredients and cultural heritage, both ancient and modern, all mingle together, creating new combinations of flavours.
