In Dubai, a city synonymous with luxury and grandeur, the arrival of The Lana is creating quite the buzz. This isn't just another swanky hotel. It's a groundbreaking moment for the Dorchester Collection, marking an impressive series of firsts in the world of high-end hospitality.

Most people would think of Paris or Rome when considering a gourmet break, but the island of Tenerife would probably not even be considered. However, the island now has seven Michelin-star restaurants holding nine stars between them and numerous other restaurants in the Michelin Guide.

In 2020, after reading too many restaurant obituaries, I set out to write annual restaurant love letters instead. Now that the food world is roaring back, getting stronger—and more creative—than ever, it has become even easier to fall in love. And so, I have a new round of love letters.

It’s 2023, and most wineries have fairly decent food—some local cheeses, cured meats and often a proper three-course lunch. But some of them are going far and above, installing Michelin-star (or Michelin-caliber) chefs on the premises and letting them run free with their technique and creativity. And of course, the wine pairings are always spot-on. Here, in alphabetical order, are ten of the most interesting right now.

Vaughan Mabee is a mad genius. I mean this as the highest compliment. The New Zealand chef asks helicopter pilots to drop him off in the middle of nowhere so he can forage, hunt and cook. He researches the molecular structure of animal proteins. He shoots deer and pheasants from his back porch and serves them to guests. He cooks with the creativity, assurance and technique of someone who spent decades in the kitchens of Noma and Martin Berasategui. He sleeps about two hours a night.

Queenstown, New Zealand, wouldn’t be Queenstown if it weren’t far away from everything—more than three hours’ flight from the closet foreign city of Sydney, a long transpacific slog from the west coast of the U.S., a diabolically long distance from western Europe. (This part of the world is called the Antipodes for a reason.) But being tucked away in the snowy mountains at the bottom of the world is what gives it its character: It’s a cosmopolitan frontier town, full of ruggedly individualistic locals and generous transplants, ski bums and worldly chefs, shepherds and sommeliers.
