Michelin’s famously anonymous inspectors have been dining throughout Colorado ahead of the state’s first-ever guide.
While the newly minted Michelin-starred restaurants won’t be revealed until Sept. 12, the culinary excellence guide today announced its first winners, which are nine Bib Gourmand restaurants spanning eight cuisines from barbecue to Israeli cuisine to ramen.
The Bib Gourmand, according to Michelin, is “not quite a star, but most definitely not a consolation prize.”
The restaurants that earn the designation are recognized as friendly establishments that serve good food at moderate prices, according to Michelin.
Simply put: These are the spots where you can get a good meal at a decent price.
Colorado is becoming the eighth Michelin Guide destination in North America, joining U.S. destinations like California, New York City, Chicago, Washington, D.C., and, most recently, Florida.
Colorado tourism officials estimate they’ll spend $100,000 annually for the Michelin program, which includes marketing and promotional efforts.
The inspectors have covered culinary hot spots, dining in restaurants in Denver, Boulder, Aspen and Snowmass Village, Vail, and Beaver Creek Resort.
However, the coverage zone doesn’t include Aurora, which is Colorado’s third most populous city and a hot spot for global cuisine with 250 independently owned ethnic restaurants. James Beard Award Winning Chef Caroline Glover of Annette, a restaurant in Aurora’s Stanley Marketplace, posted on Instagram about the miss.
“For a city with such a rich and diverse food scene like Aurora to be excluded from consideration by Michelin is a huge missed opportunity – not only for our entire community, but for the diners coming to Colorado to experience our restaurants, as well,” Glover said in an Instagram post, remarking that Aurora is home to top-notch tea leaf salad, injera, samosas, pupusas, Korean fried chicken and more.
Colorado tourism officials say that their goal is to expand the Colorado destinations highlighted in the Michelin Guide over the years and that the guide will help bring awareness to visitors about the state’s dynamic culinary scene.
Inspectors take five criteria into account when awarding Michelin stars. They are quality ingredients, harmony of flavors, technique, the chef’s personality expressed through cuisine, and consistency.
Michelin awards one, two, and three stars to restaurants. Three stars is the highest honor and given to chefs whose cooking is elevated to an art form.
The Bib Gourmand distinction is for good quality, good value cooking.
