The view from the ship’s bridge is what I expected: a ribbon of dark Arctic water leading through a maze of snowy mountain islands. But the view of the bridge is a shock. Where is the wheel, the chart and that big metal thing that goes “ting”? You know, the one marked “Dead Slow” and “Full Steam”, like you see in Titanic when they spot the iceberg? In its public areas, the Havila Capella looks like any modern cruise ship or upmarket ferry. There are lounges, a panoramic bar, a couple of gyms and a deck that can be strolled. It is what lies behind the bulkheads that is very different.

Upon reaching Phnom Penh, our first act was searching for dinner. I will never forget my first meal that truly tasted like home, after fourteen years in exile: It was fitting that it should be prahok—our defining (and aromatic) national condiment. We found someone preparing a version very much like my mother’s splendid cooked prahok: mixed with kroeung spice paste, minced pork, and young tamarind leaves, all wrapped in a banana leaf and grilled. Although I had never developed a taste for raw prahok as a child, that day the luscious, pungent fish was, for me, the flavor of Cambodia. I closed my eyes and drank in the familiar aromas. A sense of relief and well-being washed over me. Something essential from that lost world had survived, after all.

I was deep in the folds of the mountain of Tryfan when it first happened. When time seemed to stop ticking at the breakneck pace it always does when I’m sitting at laptop, working on a deadline. Instead of blue light from a screen, I was sitting at my tent door, basking in the purple glow of dusk as it crept into the Ogwen Valley, in Eryri/Snowdonia national park. The luscious green of the grass on the mountainside had turned a more muted shade and the blue of the Menai Strait in the distance had become barely distinguishable from the twilight sky.

Chef Atul Kochhar, the first Indian chef to receive a Michelin star in the UK (for Tamarind), has invited some of the most respected chefs from Michelin-starred restaurants across the UK to cook with him in “a Michelin-starred Four-Hands experience” at his Mayfair restaurant, Kanishka. Kanishka opened in 2019, building on Chef Atul Kochhar’s success at making Indian fine dining popular at his Michelin-starred restaurants Benares and Tamarind. The energetic chef has also found time to appear on television programs like Masterchef and Great British Menu and to open seven other restaurants outside London, including last week, a ninety seat restaurant Essence at The Pantiles in Royal Tunbridge Wells.
